Chickpea Broccoli Salad with Lemon Tahini Dressing

Ingredients:

  • 1 head of broccoli, finely chopped

  • 1 cup shredded carrots

  • 1 (14-ounce) can chickpeas, rinsed and drained

  • 1/2 cup sliced almonds, toasted

  • 4 to 6 green onions, sliced

  • 1/2 cup chopped fresh cilantro or parsley

  • 1/4 cup tahini

  • 1/2 large lemon, zest and juiced

  • 3 to 4 tablespoons water

  • 1 teaspoon pure maple syrup

  • 1 clove garlic, minced or grated

  • 1”-knob fresh ginger, peeled and grated

  • Kosher salt and freshly ground black pepper

Method

  1. Combine broccoli, carrots, chickpeas, almonds, green onions and cilantro (or parsley) in large mixing bowl.

  2. In smaller bowl, combine tahini, lemon zest and juice, 3 tablespoons water (add more to thin to desired consistency), maple syrup, garlic, and ginger, whisking until well-combined. Season with salt and pepper, to taste.

  3. Pour tahini dressing over broccoli mixture and toss to combine. Enjoy salad immediately, or store covered in refrigerator for up to 5 days.
