Ingredients
For Green Goddess Dressing- 1 cup cilantro
- 1 cup fresh spinach
- 2 garlic cloves
- 1/4 cup pine nuts, toasted
- 1/4 cup Parmesan cheese
- 1/3 cup freshly squeezed lemon juice
- 1/3 cup extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
For Green Goddess Salad
- 1 small head of cabbage, chopped
- 1/2 English cucumber, quartered lengthwise and chopped
- 1 green bell pepper, seeded and chopped
- 1 bunch radishes, cut into matchsticks
- 1 bunch green onions, thinly sliced
- 4 hard-boiled eggs, chopped
- Tortilla chips, for serving
Method
For Green Goddess Dressing- Add cilantro, spinach, garlic, pine nuts, cheese, lemon juice, olive oil, salt and ground pepper to a food processor or blender and blend until desired consistency.
For Green Goddess Salad
- Add cabbage, cucumber, bell pepper, radishes, onions and eggs to a large bowl and mix.
- Drizzle green goddess dressing over the salad and toss to combine. Serve with tortilla chips for scooping.
